Product Description

Craftsmanship has been a tradition at Wusthof for over 190 years. Quality and precision have always been the standard that we measure our knife by and our Gourmet line of stamped German knives take precision to a new level. Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. This 7-inch granton edge santoku knife allows you to make thin, clean slices. The hollow grind side of the blade allows air pockets to form so meat does not stick to the blade. This also allows for less friction in cutting which lets more juice from the meat remain in the meat. The santoku is a cross between a cook's knife and a vegetable cleaver. It has a thinner angle to allow for a very sharp and thin cut.

I am a bit of a nut for kitchen gadgets, and I have to say that this is one of my two favorite knives (along with a 4" Henckels paring knife). It is both very sturdy and comfortable, but also light and thin, which makes a huge difference when cutting into things like butternut squash or large potatoes or root vegetables. It really is much better than most chef or santoku's, IMHO.

As to sharpening, I use an Aladdin Knife sharpener, a wall hanging unit which works very well with this and all my knives. It is not a purist's tool, but it works just right for me. It only needs sharpening about once a month for me, and does very well.

My wife had been wanting this knife for a while, so I ordered this for her for Valentine's Day. She's an avid cook, so this knife has already gotten a lot of use. So far, we don't have any complaints!

Also, this may be obvious, but the blade of this knife is incredibly sharp! My wife has already nicked her finger once or twice ;)

This knife has all but replaced my collection of chef's knives. It cuts everything from cheese to tomatoes effortlessly and smoothly. It keeps its edge well and only needs a touch with the sharpening steel every few days to maintain that edge.

Highly recommended.

I like to buy kitchen items for my wife once in a while as a surprise (she likes it...really). I had been seeing Santoku knives around quite a bit and they looked useful so I bought this one for her. It is now her favorite knife. I thought it was a bit on the light weight side, but she said that was good, not bad. It is definitely the sharpest knife I have seen right out of the box. Anyway, long story short, she thinks it's great and she knows quality after having had her own restaurant years ago.

This knife was all one would expect from a company of this caliber. It is lightweight, sharp, well-balanced and does an outstanding job cutting and slicing. The only thing better would be a set of these knives.
